Handling Food Hygienically (4N1119)


The purpose of this award is to ensure that the learner is fully capable of fulfilling the legal obligations and Food Safety Regulations in handling food. On successful completion of this course the learner will be able to carry out the correct procedures to safely provide food to the user. The benefits to the learner is that they can carry out safe food handling in any food related environment - manufacturing, catering and retail.

Learning Outcomes


Learners will be able to:

  1. State the role of the employee in food hygiene and safety including personal hygiene, legal responsibilities and the use of protective clothing
  2. Outline how food is put at risk by chemical, physical and microbiological hazards, cross contamination and allergens
  3. List food borne illness and the factors which contribute to their expansion
  4. Describe how pests can be controlled in and around a food premises
  5. Outline the reasons for ensuring that correct temperatures are used in food preparation and production including the limitations of temperature control and procedures for recording food temperatures
  6. Use safe and hygienic food handling practices including HACCP, for food preparation, cleaning, waste disposal and pest prevention
  7. Refrain from unhygienic practices in food production
  8. Complete a range of basic food safety documents and records.

  • Protection for Learners:
    As a part of best practice to safeguard the interests of learners enrolled for programmes exceeding three months and in line with the regulatory/statutory requirements of QQI and the ‘Qualifications and Quality Assurance (Education and Training) Act 2012’.
    NCU Training has arranged comprehensive cover by a Learner Protection Policy, Number
    LPI-00098-PHIS with O'Driscoll O'Neil underwritten by Hiscox Insurance Company Limited, June 2018.
    The purpose of this policy is to ensure that learners are protected in the event of the unexpected cessation of any training programme in NCU Training provided, and/or organised and/or sub-contracted training.
    Evidence to confirm implementation of the NCU Training Protection for Learners Policy includes:

    1. A statement of arrangements for Protection for Learners in programme information for relevant programmes of over three months’ duration.
    2. Fee refund documentation, where it applies.
    3. Learner transfer documentation, in the event of the unexpected cessation of programmes
